Before the move, I tried Heidi’s Healthy Coconut Oil Granola off the blog LightlyCrunchy. I tweaked the recipe just a pinch as I didn’t have all the ingredients in the house. What you’ll need:
4 cups rolled oats
1 and 1/3 cup sliced almonds
3/4 cup unsweetened organic shredded coconut
1/2 cup flax seeds
1/2 cup sunflower seeds
2 tsp raw vanilla
4 tbsp local raw honey
6 tbsp coconut oil
1 cup dried cranberries or other dried fruit
How to make it:
1. Preheat oven to 300 degrees F.
2. Heat honey (until thinned) and melt coconut oil in microwave. I put them in together.
3. Add vanilla to melted honey and coconut.
4. Mix wet ingredients with dry.
5. Spread in 2 well-greased Pyrex baking dishes and bake at 10 to 15 minute intervals for about an hour, stirring each time. The thinner you spread the granola, the less time it takes to cook.
6. When granola is dry and golden brown, it’s good to go.
7. Mix in 1 cup dried fruit once cooled and store in air tight container.
End Result:
Delicious and pretty! The flax seeds tried to escape to the bottom so stir well or use other seeds instead. If you prefer a sweeter granola, use more honey. If you use baking sheets rather than Pyrex, it takes less time to cook.
