Easiest, quickest lunch–EVER!
I believe home cooking is good for the environment, and good for the soul. It also brings us together in the kitchen, which is good, when we aren’t arguing. (Too many cooks in the kitchen!)
This takes only a few minutes to make. You just need to chop/dice the onion and tomato. My mother even asked for the recipe!
What you’ll need:
1 or two 6-ounce cans of tuna packed in oil
1 large tomato or two Romas, wedged or diced
1/2 medium onion, sliced or diced
1/2 teaspoon salt
1 teaspoon black pepper
1-2 tablespoons red wine vinegar
Mix it all together and serve over crackers.
If it sits in the fridge a day or two, it’s even better! Be sure you only use 1/2 an onion or it will override all the other flavors. Sometimes, I add an extra tablespoon or two of olive oil to make it juicier and more flavorful. Enjoy!

great idea, tuna-canapes, mmm! i can almost smell it from here..so flavorful, and nicer than the common bread sandwich..it sounds like seviche, you could use cilantro and raw fish, like fresh caught trout filet for variety and color.

Hubby would divorce me if I made anything tuna in this house.
